I must confess: I am an absolute Mango junkie. Together with dates and bananas mangos are my favourite fruit for sure. This morning I felt like having something refreshing for breakfast: so I made myself this delicious and healthy mango ice cream. Whether you are vegan or not, I am sure you will love this super easy creation.
4 large ripe bananas
300g frozen mango
From the above measurements I got a pretty huge portion of ice cream (the picture only shows about ½ of the final product, so just adjust the measurements according to how much you feel like eating.
How it works:
- Start by blending the bananas in a blender. If you don’t have a blender at home a hand blender also works fine.
- Add a bit of the frozen mango and blend again. Don’t add all the frozen mango at once, it might be too much for your blender (trust me, I have already broken 3 blenders)
- Once you have blended all the frozen mango with the bananas fill the finished product into a bowl.
- Now you can top the mango ice cream with some fresh mango and pomegranate seeds.
I just love starting my day with fresh, sweet fruit. It really satisfies my sweet tooth and I rarely have any more sugar cravings for unhealthy sweets!
