With christmas being around the corner my house has basically been filled with the tempting smell of christmas cookies non-stop, as my dad somehow rediscovered his love for baking. Needless to say that the treats he created were not so healthy and not very vegan. So I decided to create my own christmas treats: low fat, vegan chocolate-coconut balls.
For 20 balls you will need about:
– About 400g of dates (preferably medjoul dates)
– 3 tablespoons of (gluten-free) oats
– 3 tablespoons of carob powder
– shredded coconut
Start by pitting the dates, then place them into a bowl and cover them with boiling water (so they become softer and are easier to blend). Next add the oats and the carob powder and blend everything until you have a nice mixture. Then use your hands and roll little bits of the mixture into balls. If you want to, you can then roll those balls in some shredded coconut for some extra flavour. Afterwards place them in the freezer for a bit
